The Wines

The quality of our wines is rooted in the vineyard. Basic conditions for quality are yield reduction, green harvesting, manual labour and the use of biodynamic farming products in the process of the wine vegetation.
By combining both traditional and modern vinification methods the quality is further refined and optimised.
We produce single varietal wines of Barbera, Merlot and Sauvignon Blanc and all are vinified dry.
The particular Piedmont climate and its heavy red clay soils contribute to the full body and complexity of our wines.

ORGANIC, NATURALLY
Organic, environmentally sustainable agriculture has always been selfevident to us, so that for the past fifteen years we forwent an organic certification. However, now that we have applied for it, the ecological seal will soon appear on our label for all to see.
Organic viticulture as we practice it, means: we do not use chemical products, such as herbicides. The grass between the rows is mulched and manually cut. Essential spraying products such as sulphur and copper are elementary, i.e. occur naturally and are unrefined. Only organic certified spraying products are used. We refrain from fertilisers since we do not aim for quantity and fewer grapes and small berries produce better quality wines. By using biodynamic products the soil and the plants are strengthened.
Harvesting takes place manually. The grapes are hand-picked and carefully placed into crates and taken to the winery where they are sorted once more according to quality. Fermentation takes place on the skins, the wine is later separated and filled directly into tanks or Barrique barrels. Procedures of vinification such as malolactic fermentation, clarification and stabilisation of the wine are exclusively assisted by temperature control.
Our wines do contain sulphites, yet as is known, "it is the dose that makes the poison".
